Banana Bran Muffins with Blueberries

  • 1 medium, mashed
  • 2 cups
  • 1 teaspoon
  • 1/2 teaspoon
  • 1/2 teaspoon
  • 1/4 cup
  • 1 1/4 cups
  • 1 1/4 cups
  • 1 teaspoon
  • 1/2 teaspoon
  • 1 tablespoon, ground
  • 1/3 cup, packed
  • 1 cup, fresh or frozen

Recipe steps:

  • Preheat oven to 400F.
  • In a medium bowl, mash the banana and add the All-Bran Cereal, soy milk, extracts, and Egg Beaters.
  • In another bowl, mix the Bisquick, cinnamon, cloves, flax seeds, and brown sugar. Add to wet ingredients, one half at a time. Stir until just combined. Do not overmix.
  • Gently fold in blueberries.
  • Spray muffin tin with cooking spray and fill cups evenly.
  • Bake for 20 minutes. Remove muffins from pan and cool on a wire rack.
  • May be frozen individually and thawed in the microwave or toaster oven.
