Roasted Pork Tenderloin With White Beans & Spinach



Tender, juicy pork tenderloin, combined with creamy white beans, rosemary and wilted spinach makes a delicious and nutritious meal. This easy one-pan dinner can be on the table in under an hour, so it’s perfect for busy weeknights! Roast the pork to perfection and serve it with the white beans and spinach for a complete and balanced meal.

Ingredients used:

  • 1 pork tenderloin - -- (1 1/4 to 1 1/2 lbs.)
  • 1 teaspoon - Extra-virgin olive oil
  • 1 teaspoon - Salt
  • 1 teaspoon - Rosemary
  • 0.5 teaspoon - Thyme
  • 0.5 teaspoon - Fennel seeds
  • 0.5 teaspoon - Freshly ground black pepper
  • 1 teaspoon - Extra-virgin olive oil
  • 1 tablespoon - Chopped garlic
  • 28 ounce - Plum tomatoes in juice -- chopped
  • 0.5 teaspoon - Rosemary
  • 2 can - Cannellini beans -- (15 or 19 oz) drained and rinsed
  • 0.5 teaspoon - Salt
  • 3 bunch - Fresh spinach -- trimmed -- or 3 bags (10 oz. each)
  • 2 tablespoon - Water
  • 0.25 teaspoon - Salt
  • Optional sprig - Fresh rosemary for garnish

Recipe steps:

  • Preheat oven to 450F. Brush all sides of pork with oil, then place in center of a jelly-roll pan.
  • Combine salt, rosemary, thyme, fennel seeds and pepper in a cup and rub the mixture all over pork.
  • Roast pork for 10 minutes and turn it over, then roast for 10-15 minutes more until the internal temperature reaches 155F when inserted in the center.
  • Transfer pork to a cutting board and loosely cover it with foil to keep it warm.
  • Meanwhile, heat oil in a medium saucepan over medium heat and add garlic, cooking it for 1 minute.
  • Stir in tomatoes and rosemary, and bring it to a boil. Reduce heat to medium-low and add in beans, salt and pepper, then simmer for 15-20 minutes until the mixture thickens.
  • In a 12" skillet, heat water and salt over high heat. Add in the spinach and cook, stirring until wilted, for 3-5 minutes. Drain the spinach.
  • Slice the pork and divide it among the serving plates. Divide spinach and spoon beans over spinach on each plate. Garnish with fresh rosemary, if desired.
