Recipe steps:

  • Heat oil in a large nonstick skillet over medium-high heat until hot.
  • Add onion and the next 6 ingredients (onion through garlic) and sauté for 2 minutes.
  • Add chickpeas, beans, and tomato sauce and bring it to a boil.
  • Reduce heat, and simmer for 20 minutes or until thick.
  • Prepare taco shells according to package directions.
  • Divide bean mixture evenly among 8 taco shells.
  • Top each with lettuce, tomato, cheese and salsa.
