Delicious Lightened Up Impossible Peaches and Cream Pie



This classic Impossible Peaches and Cream Pie is a great summer dessert. It is made with sliced peaches, spices, evaporated skim milk, egg substitute, sugar substitute and Bisquick baking mix. It is topped with a streusel containing margarine, Bisquick, sugar substitute and slivered almonds. We have lightened up this recipe to make it less indulgent and also added some extra spices for more flavor. Enjoy this light and fluffy pie for a special summer treat!

Ingredients used:

  • 3 1/2 cups - Sliced peaches - well drained
  • 1 teaspoon - Ground cinnamon
  • 1/4 teaspoon - Ground nutmeg
  • 1 cup - Evaporated skim milk
  • 1/2 cup - Egg substitute, liquid
  • 3/4 cup - Sugar substitute
  • 2/3 cup - Bisquick baking mix
  • 1 tablespoon - Margarine from soybean oil - firm
  • 1/4 cup - Bisquick baking mix
  • 2 tablespoons - Sugar substitute
  • 1/3 cup - Slivered almonds - optional
  • 6 tablespoons - Cool Whip Lite

Recipe steps:

  • Set oven to 375F and grease pie pan 10 x 1/2".
  • Place sliced peaches in plate and sprinkle with cinnamon and nutmeg. Toss well.
  • In a small bowl, mix together the margarine, Bisquick, sugar substitute and slivered almonds. Set aside.
  • In a blender, beat the evaporated skim milk, egg substitute, sugar substitute and Bisquick baking mix on high for 15 seconds or with an electric mixer on high for 1 minute.
  • Pour mixture into plate with peaches and sprinkle with streusel mixture.
  • Bake in preheated oven for 40-45 minutes until knife inserted in center comes out clean.
  • Top each serving with Cool Whip Lite before serving.
