Crispy Potatoes – Larry’s Favorite Version



If you’re looking for a tasty and easy side dish, then these crispy potatoes are a must-try! They are not only simple to make, but they are also equally delicious. The combination of potatoes, green onions, basil, black pepper, vegetable broth, and Hungarian paprika is sure to tantalize your taste buds. Plus, this dish is vegetarian and vegan-friendly, making it a great dish for any dinner or gathering.

Ingredients used:

For 6 people

  • 2 pounds - Russet potatoes
  • 1 bunch - Green onions
  • 2 teaspoons - Basil
  • 1/4 teaspoon - Black pepper
  • 1 cup - Vegetable broth
  • 1 teaspoon - Hungarian paprika
  • 3 tablespoons - Italian parsley

Recipe steps:

  • Peel cooked potatoes and dice into 1-inch cubes.
  • Place cubes in an 8x11x2-inch baking dish that has been sprayed with nonstick spray. Sprinkle with chopped green onions, Italian seasoning, and freshly ground pepper.
  • Mix gently with a fork to distribute ingredients.
  • Pour chicken stock over the potatoes and sprinkle generously with Hungarian paprika.
  • Bake in a preheated 400-degree F oven on upper shelf. Stir every 15 minutes until nicely browned and crisp, about 45 minutes. Place under broiler to complete browning before serving.
  • For a variation, after stirring in step 4, spray with a mixture of 3 tablespoons mild soy sauce and 1/4 cup water. Stir again, and spray and stir every 15 minutes.
