Delicious Banana Bread Recipe

It is a great way to use up overripe bananas and can also be served as muffins. It is made with a variety of ingredients including bananas, prunes, sweetener, sour cream, dried egg whites, bran, whole wheat flour, oats, vital wheat gluten, baking powder, baking soda, salt, nutmeg, cinnamon and cardamom. This tasty treat is perfect for breakfast or as a snack and can be enjoyed by the whole family!

Ingredients used:

For 1 people

  • 4 cups - Mashed bananas
  • 1 jar - Baby food prunes
  • 0.75 cup - Granulated sweetener
  • 0.25 cup - Brown sugar
  • 0.5 cup - Nonfat sour cream
  • 4 tablespoons - Dried egg whites
  • 2 teaspoons - Vanilla
  • 3 cups - Bran
  • 2 cups - Whole wheat flour
  • 1.5 cups - Quick-cooking oats
  • 0.5 cup - Vital wheat gluten
  • 3 tablespoons - Baking powder
  • 2 teaspoons - Baking soda
  • 1 teaspoon - Salt
  • 2 teaspoons - Ground nutmeg
  • 2 teaspoons - Ground cinnamon
  • 1 teaspoon - Ground cardamom

Recipe steps:

  • Preheat oven to 325F. Line the bottoms and a bit up the sides of 3 loaf tins (8x41/2?) with waxed paper. Or use non-stick tins. (Either works).
  • In one bowl, combine the mashed bananas, prunes, granulated sweetener, brown sugar, nonfat sour cream, dried egg whites and vanilla.
  • In another bowl, combine the remaining (dry) ingredients, including the bran, whole wheat flour, quick-cooking oats, vital wheat gluten, baking powder, baking soda, salt, nutmeg, cinnamon and cardamom.
  • Add the wet ingredients to the dry - do not overmix! The batter will be fairly thick and lumpy. (If it's too runny, it takes too long to cook and loses texture.)
  • Split the batter between the loaf tins.
  • Bake for approximately 40 minutes. Probably should start checking at 30 minutes. A toothpick should come out clean when stuck into the loaf.
  • For muffins (makes 24 large): Add 1 cup raisins (optional) and bake for 26 minutes in a 325F oven.
